# A Blue Lobster Is a Fluke on Top of a Fluke

## Blue Lobsters Still Turn Red When You Boil Them

A lobsterman off Maine hauls a trap, and there's a flash of electric blue in among the usual browns and greens. It looks fake. It looks like someone dropped a plastic toy in the pot.

It's a genetic anomaly that overproduces a protein called crustacyanin, turning the shell bright blue — and the science behind it explains something about every lobster you've ever eaten.

### Two numbers, not one

Everyone quotes the same statistic: roughly one in every two million lobsters is blue.

But that's the odds of the mutation existing, not the odds of it ending up in your trap. Northeastern's Marine Science Center puts the chance of actually catching one at about one in 200 million.

The gap between those two numbers is the interesting part, and nobody explains it. A blue lobster on a dark rocky seabed has no camouflage at all. It's a beacon. Most of them get eaten as juveniles long before they reach legal size, which means **every adult blue lobster hauled onto a deck is a survivor of a lifetime of being extremely visible to everything that wanted to eat it.**

### Why lobsters are the colour they are

Here's the chemistry, and it's genuinely elegant.

Lobsters get their colour from a red-orange pigment called astaxanthin. When astaxanthin binds to proteins in the shell — including a blue protein called crustacyanin — its colour shifts, producing the familiar mottled hue. Three layers of pigment combine to give a normal lobster its olive-green and brown seabed camouflage.

Now the good part. A boiled lobster turns red because heat causes the crustacyanin proteins to unwind, releasing the astaxanthin — which is red.

The red pigment was in there the whole time. Cooking doesn't add colour to a lobster. It **removes the protein that was hiding the colour.** Every lobster on every restaurant plate is showing you its true pigment for the first time.

Which means the answer to the obvious question is yes: drop a blue lobster in the pot and it comes out the same red as any other. The mutation only affects the wrapper.

### The other colours

Blue is the famous one, but it isn't the rarest. Other rare variants include half-orange half-black split lobsters, cotton-candy colouring, and calico patterns. Bilateral split lobsters — one colour down each side, straight down the middle — are the ones that genuinely stop biologists in their tracks.

Diet plays a role too: lobsters eating mostly small fish rather than shrimp and crabs take in less astaxanthin, which shifts their colouring.

### My take

What I find most striking is what happens next, because it's consistent and it's not required by any law.

A Jersey fisherman released a blue lobster that was legally within size limits, specifically for conservation. A Gloucester lobsterman photographed his and put it straight back. The Maine one went to a university touch pool and got named Neptune by a high school class. 

These are commercial fishermen looking at several hundred dollars of legal catch, and the near-universal instinct is to let it go. I don't think that's sentimentality. I think it's the same impulse that makes people stop for a rainbow — a recognition that some things are worth more as a story than as a product.

### The verdict

- The blue is one protein, overproduced by a genetic fluke.
- The mutation is about 1 in 2 million; catching one is closer to 1 in 200 million.
- Being blue is a survival disadvantage, so every adult one is a fluke on top of a fluke.
- Boil it and it turns red anyway.

The colour that makes it a once-in-a-lifetime catch is the same colour that makes it easy prey.

It only got to your trap because nothing else found it first.
